Chef Yumi Chiba reveals a painstaking process of preparing Atsuage Tamago, Kohada, Hirame, Akagai, jack mackerel, Akami tuna, shrimp, and tako, which she serves as an Omakase course meal.  Sushi preparation is traditionally reserved for male chefs as man's profession.  Chef Chiba challenges this norm and is recognized as one of the few successful female chefs.
