Chef Yuki Sugeta serves regular sushi for his customers, but he became known for his other offering, micro sushi. It's 1/300th the size of normal sushi. The chef explains that it was born out of his wish to entertain a child who visited with his mother. Despite the mother's attempt to encourage her son to eat sushi, the child decided the sushi was not to his liking. Watching the finicky child, the chef made tiny sushi for boy, hoping he may try it and possibly change his mind about sushi.
