How To Make a Tiger Sushi Roll

Ingrediients:

 

  • 2 large mangoes
  • 4 good size strawberries
  • 2.4 grams Agar Agar
  • 160 ml water
  • 1 gram Locust Bean Gum
  • 4 grams squid ink
  • A few grains of cooked white sushi rice
  • ½ Butternut squash

Sushi Roll Ingredients:

  • ½ sheet of Nori
  • 120 grams cooked and seasoned sushi rice
  • Sriracha hot sauce
  • Homemade salmon tartar

Equipment:

  • Dessert spoons
  • Electric juicer
  • Wooden chopping board
  • Electric hand-held blender
  • Glass bowls (for the ingredients)
  • 3 large plastic measuring jugs
  • 2 large saucepans
  • Flat wooden spatula
  • Large plastic tray
  • Mango splitter (optional)
  • Food-safe silicone mat (can be substituted for cling film)
  • Miyabi, or similarly sharp chef’s knife
  • Small paring knife
  • Small paintbrush
  • Pair of tweezers
  • Butter knife
  • Bamboo rolling mat
  • Cling film
