Sauce Ingredients

  • 100 ml Soy Sauce
  • 100 ml rice wine vinegar
  • 15 grams fresh, finely grated ginger
  • 1 garlic clove, crushed
  • 1/2 fresh lemon
  • 1, 2 gram sachet Xanthan Gum
  • 1 tbsp toasted sesame seeds
  • Sesame seed oil
  • Kewpie mayonnaise
  • Truffle oil

Ingredients

  • 120 grams (4 oz) cooked white sushi rice
  • 1/2 sheet of Nori
  • 5 fresh Asparagus stems (cleaned and trimmed)
  • Large cut of sirloin steak
  • Smoked sea salt (to season)
  • Sesame seed oil

For the Garnish/ Presentation:

  • Fresh Wasabi
  • Pickled ginger
  • 1-2 finely chopped spring onions, finely chopped
