Kaiten Sushi restaurants or conveyor belt sushi restaurants were born out of inaccessibility to affordable sushi. Kunihiko Tanaka, former vinegar peddler to sushi restaurants saw the void in the market. Sushi restaurants were visited on special occasions for many as sushi were too expensive. It was Tanaka's vision to use technology to minimize the sushi chefs' involvement to reduce cost and bring sushi to the mass at reduced price.
